    Yeast Basics

    • Yeast is a one-cell fungus that is found in the air, in the water, and on plants and animals. When used in bread, the yeast feeds off sugars in the dough and expels carbon dioxide waste. The carbon dioxide fills tiny bubbles in the dough, forcing them to swell and giving the bread its airy texture.

    Formation

    • Dry active and instant yeast are both sold in granulated form. Instant yeast is more finely ground than active dry yeast.

    Function

    • Instant yeast absorbs water faster than active dry yeast, allowing it to work faster.

    Rising Times

    • Dough made with active dry yeast should rise twice slowly to encourage the best texture and flavor. Dough made with instant yeast only needs to rise once, and takes half the time to rise.

    Preparation

    • Active dry yeast works best when it is mixed with warm water and sugar and allowed to "proof" before it is used. There is no need to proof instant yeast; it can be mixed right in with the dough.

    Use in Recipes

    • Instant yeast can be used as a substitute in any recipe that calls for dry active yeast. Just remember to add extra water to replace the water you would have used for proofing.

Hare Krishna dear Chandrama Pyakurail Mataji, please accept my humble obeisance! All glories to Srila Prabhupada!

As i know instant yeast and dry yeast are same in nature. In ayurveda it says that yeasts are in the mode of ignorance. If person eats too much yeast it may create bacterias in the feet (something like bad smell in the feet, sorry :-x)

They are living entities which grow very quickly and their consciousness is not good within 2-3 hours they create bad smell. But in Bhagavad Gita Krishna says that food in goodness should smell, look, feel pleasing to the senses.

Sometimes we can use, but not as a habit.

The best thing is curd or old milk, or old curd. any old milk product can be replaced.

Hope Devotees also will share with their knowledge also.

Hare Krishna dear Champakalata Mataji, please accept my humble obeisances! All glories to Srila Prabhupada!

Mostly i do use recipe webs and books like: http://totalveg.com/categories or Her Grace Yamuna Mataji's Book.

It is easy, dear Mataji, You can find so many without yeast bread recipes googling :-)

mostly i cook chapatti without any yeast. or add very sour curd.

for pizza we can use baking soda. But baking soda also is not so good for health but better than yeasts.

Again we can use them but try not to make a habit.

        Your servant,
